Kristina Rodriguez and her husband spent ten years saving, planning, and imagining how they could share their love of Mediterranean cuisine with their community. When it came time to turn that dream into reality, they came to the Central Coast SBDC for help navigating health permits, kitchen constraints, and the nuts and bolts of running a business the right way.
Through free one-on-one business advising, they built a solid business plan, mapped out their marketing, and launched a delivery service that’s already building a loyal following — and setting the stage for their ultimate goal: a vibrant local food truck serving up bold flavors across San Benito County.
